We put a big emphasis on chicken that doesn’t have any antibiotics, hormones or steroids. ![]() The biscuits come in as flour, and we add everything we need to add to it and we go from there. We try to get really good ingredients, and we make everything from scratch that we possibly can (and) try not to overcomplicate it. One of the things I love about (this restaurant) is that we have, by far, had some of the most gracious guests you could imagine. How would you describe the restaurant’s atmosphere? Kids have their own menu to look over, while adults have a plethora of breakfast and lunch options to choose from. They serve mimosas, tea and, of course, coffee. There are 79 seats between the long, community tables inside and brick patio area. Augustine location opened its doors in December 2015 and has had a line out the door since. The first location opened in November 2012 and expanded at an incredible rate. “Maple Street’s mission statement is to help people, serve others and to be a part of the community, so we use a successful business as a vehicle to do that,” he said. General Manager Brad Cummins calls himself the community leader of the restaurant. Augustine location in particular has gained special attention from the Travel Channel and Food Network for its menu options and service. Thompson said this guidance made it easier to ensure the restaurant could open safely.Of the 37 locations in the southeast United States, Maple Street Biscuit Company has 21 in Florida. Though the Maple Street Biscuit Company corporation is typically hands-off with its management - allowing each location to operate more as a community business, according to Thompson - it did provide safety guidance and procedures for operating its restaurants during the pandemic. ![]() Brunch served with social distanceĪt the Berry Hill location, customers will find all of Maple Street's staples, including made-from-scratch biscuit sandwiches, chicken and waffles and fresh roasted small-batch coffee, all served with social distancing. Maple Street Biscuit Company has since grown to 38 locations across seven states. The Berry Hill restaurant is the second Maple Street Biscuit Company location in the Nashville area (the first opened in Brentwood on May 12) and the seventh location in Tennessee. Scott Moore and Gus Evans founded the company in Jacksonville, Florida, in 2012. Thompson said being able to provide stability to their staff fits well with the community-oriented nature of Maple Street. Through initial phone and video conference interviews and some in-person interviews as restrictions lifted, Thompson built a team of young professionals, some of whom found themselves looking for work after pandemic-related shutdowns put their usual careers in limbo. "That's not the norm for opening a restaurant at all." "Not being able to open when we said we were going to open, that part was very emotionally draining," he said. Thompson waited until "the very end" to hire staff for the restaurant - amid the evolving regulations, he wasn't sure when the employees would be able to start work. ![]() That capacity was expanded when phase two began May 25. Nashville started phase one of its reopening plan on May 11, allowing retail and restaurant establishments to open their stores at 50% capacity. "It doesn't make sense to try and continue opening a restaurant during those times."īut by early May, Thompson and his team decided it was time to bring Maple Street to 8th Avenue South. "We ended up putting a halt on the project just to let our contractors go home to be with their families and shelter in place at their own homes," Thompson said. ![]() Nashville Mayor John Cooper instituted a safer at home order restricting non-essential services and limiting restaurant service to takeout on March 24.
